Francesco Dibenedetto is executive chef at the Bibendum restaurant in London, run by chef Claude Bosi.
Bibendum is a legendary place for fans of the Michelin guide. It was founded at the British branch of the French tyre manufactures, built in Chelsea in 1911. The dining room used to house the office of the Michelin Guide and now boasts a beautiful stained-glass window depicting the Bibendum.
In cooperation with the haute cuisine magazine Italia Squisita, we asked Francesco to present his interpretation of a great classic of British cuisine: British Steak and Ale Pie.
The main ingredient in this beef stew recipe is beer. Instead of a classic English Ale, Francesco chose our L'IPPA, the first 100% Italian IPA. According to the chef, this beer has a strong aromatic structure, perfect for marinating the red meat used in a stew.
